Savory Shrimp and Crab Biscuit Melts

Ingredients
  

For the Biscuit Base
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter, cold and cubed
  • ¾ cup milk
For the Shrimp and Crab Filling
  • 1 cup fresh shrimp, peeled and chopped Use fresh seafood for the best flavor.
  • 1 cup fresh crab meat
  • ½ cup cream cheese, softened Can substitute with Greek yogurt for a lighter option.
  • ½ cup shredded cheddar cheese Experiment with other cheeses for different flavors.
  • 2 pieces green onions, chopped
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
Optional Garnish
  • Fresh parsley, chopped
  • Lemon wedges

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, mix together the flour, baking powder, and salt. Cut in the cold, cubed butter until the mixture resembles coarse crumbs.
  3. Gently stir in the milk until just combined. Do not overmix!
  4. Turn the dough out onto a floured surface. Pat it down to about ¾-inch thickness and cut into rounds using a biscuit cutter.
Baking Biscuits
  1. Place the biscuits on a baking sheet lined with parchment paper. Bake for 12-15 minutes, or until golden brown on top.
Making the Filling
  1. While the biscuits are baking, combine the shrimp, crab meat, cream cheese, cheddar cheese, green onions, lemon juice, garlic powder, and a pinch of salt and pepper in a bowl. Mix until well combined.
Assembling the Melts
  1. Once the biscuits are baked and slightly cooled, slice them in half. Spoon a generous portion of the shrimp and crab filling onto the bottom half of each biscuit.
  2. Return the assembled biscuit melts to the oven and bake for an additional 5-7 minutes, or until the filling is warmed through and bubbly.
Serving
  1. Remove from the oven, garnish with fresh parsley and serve with lemon wedges on the side.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 2 days. Reheat gently in the oven to restore the biscuit's flakiness.
