Preparation
- In a large bowl, combine soy sauce, fish sauce, brown sugar, lime juice, minced garlic, grated ginger, and vegetable oil. Add the chicken pieces, tossing to coat well. Cover and let marinate in the refrigerator for at least 30 minutes, or up to 2 hours for deeper flavor.
- Preheat your oven to 400°F (200°C).
- In a separate bowl, mix together panko breadcrumbs, shredded coconut, and crushed red pepper flakes.
- Remove the marinated chicken from the fridge. Coat each piece in the breadcrumb mixture, pressing gently to ensure adherence. Place coated chicken bites on a baking sheet lined with parchment paper.
Baking
- Bake in the preheated oven for about 15-20 minutes, turning halfway through, until golden brown and cooked through (internal temperature should reach 165°F (74°C)).
Making the Dipping Sauce
- In a bowl, whisk together peanut butter, soy sauce, honey, rice vinegar, and sesame oil. Gradually add water to reach the desired consistency.
Serving
- Serve the chicken bites hot with the dipping sauce on the side.
