Ingredients
  

For the Crust
  • 1.5 cups 1 ½ cups graham cracker crumbs
  • cup ⅓ cup granulated sugar
  • ½ cup ½ cup unsalted butter, melted
For the Filling
  • 1 cup 1 cup creamy peanut butter
  • 1 cup 1 cup powdered sugar
  • 8 oz 8 oz cream cheese, softened
  • 1 cup 1 cup whipped topping (like Cool Whip)
  • 1 teaspoon 1 teaspoon vanilla extract
For Topping
  • Extra whipped topping
  • Chocolate shavings or chopped peanuts (optional)

Method
 

Preparation
  1. In a mixing bowl, combine the graham cracker crumbs and sugar.
  2. Pour in the melted butter and mix until everything is well combined.
  3. Press the mixture firmly into the bottom and up the sides of a 9-inch pie dish to form the crust.
  4. Chill the crust in the refrigerator for about 15 minutes while you prepare the filling.
Make the Filling
  1. In a large mixing bowl, beat the softened cream cheese until smooth.
  2. Add the peanut butter and powdered sugar, mixing until it’s creamy and well-blended.
  3. Stir in the vanilla extract and fold in the whipped topping gently until everything is combined for a fluffy texture.
Assemble the Pie
  1. Spoon the filling into the chilled crust, smoothing it out evenly with a spatula.
  2. Cover and refrigerate the pie for at least 3 hours, or until set. Overnight is even better for enhanced flavor.
Serve
  1. Once set, top with additional whipped topping.
  2. Sprinkle chocolate shavings or chopped peanuts on top for an extra touch and slice to serve.

Notes

For a healthier version, consider using natural peanut butter and low-fat cream cheese. You may substitute graham cracker crumbs with crushed cookies of your choice. Store leftovers covered in the fridge for up to a week. You can freeze slices for a quick treat later.
