  • 1 teaspoon freshly ground black pepper
For the Lemon Pepper Blend
  • 2 lemons lemons (juice of one, zested; sliced for garnish)
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 1 teaspoon paprika

For Cooking
  • 1 large onion, quartered
  • 4 cloves garlic, minced

Preparation
  1. Start by seasoning the chicken. Rub the salt and pepper generously over its entire surface for a good foundation of flavor.
  2. In a small bowl, combine the lemon juice, zest, garlic powder, onion powder, Italian seasoning, and paprika. Mix well until it forms a lovely paste.
  3. Take your prepared lemon pepper mix and rub it all over the chicken, ensuring every nook and cranny is coated. Allow it to sit for a moment to let the flavors meld.
  4. Place the quartered onion and minced garlic at the bottom of your slow cooker to enhance the flavor of the chicken.
Cooking
  1. Gently place the seasoned chicken atop the onions and garlic. Cover and cook on low for 6-8 hours or high for 4-6 hours. The chicken is done when the internal temperature reaches 165°F and the juices run clear.
Serving
  1. Once cooked, let the chicken rest for a few minutes before carving. Garnish with fresh parsley and lemon slices to elevate the presentation.

Notes

For a cleaner approach, omit the onions and garlic if you prefer a plain chicken. Add vegetables like carrots or potatoes into the slow cooker for a complete meal.
