Ingredients
  

For the Filling
  • 2 cups fresh spinach, chopped Use fresh spinach for the best flavor, but frozen spinach can also work well when thawed and drained.
  • 1 cup feta cheese, crumbled Feel free to substitute feta with goat cheese for a different flavor profile.
  • 1/2 cup ricotta cheese (or cottage cheese)
  • 1 clove garlic, minced
  • Salt and pepper to taste
For the Pastry
  • 1 package of frozen puff pastry (2 sheets), thawed
  • 1 each egg, beaten (for egg wash)
  • Sesame seeds (optional, for sprinkling)

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) to get it hot and ready for baking.
  2. In a bowl, combine the chopped spinach, feta, ricotta, minced garlic, and a pinch of salt and pepper. Mix until everything is evenly blended.
  3. On a lightly floured surface, roll out one sheet of thawed puff pastry into a rectangle, approximately 10×12 inches.
  4. Using a sharp knife or pizza cutter, slice the rectangle into 1-inch wide strips.
Assembly and Baking
  1. Place about a tablespoon of the filling at one end of each strip.
  2. Fold the pastry over the filling and twist the ends together to form a spiral shape.
  3. Place the twists on a baking sheet lined with parchment paper. Brush them with the beaten egg and sprinkle sesame seeds on top if desired.
  4. Bake in the preheated oven for 15-20 minutes or until the pastry is puffed and golden brown.
  5. Allow the twists to cool slightly before serving. They are best enjoyed warm, straight from the oven!

Notes

These twists can be stored in an airtight container for up to 3 days. Reheat in the oven for a few minutes to retain crispiness. You can prepare the twists ahead of time and refrigerate them until you're ready to bake. For a vegetarian option, feel free to add additional vegetables like artichokes or sun-dried tomatoes to the filling for extra flavor.
