Ingredients
  

For the Cake
  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 2 large eggs
  • 1/2 cup whole milk
  • 2 tbsp melted butter
  • 1 tsp vanilla extract
For the Filling
  • 1 cup fresh strawberries, sliced Use fresh strawberries for the best flavor; frozen may become too mushy.
  • 1/2 cup whipped cream
  • Zest of 1 lemon (optional) optional for added flavor
For the Topping
  • Powdered sugar for dusting optional

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease and flour a baking sheet or line it with parchment paper for easy removal.
  2. In a mixing bowl, combine the flour, sugar, baking powder, and salt. Whisk until well blended.
  3. In another bowl, whisk together the eggs, milk, melted butter, and vanilla. Gradually whisk the wet ingredients into the dry ingredients until just combined.
  4. Pour the batter onto your prepared baking sheet and smooth it out into an even layer. Bake for 12-15 minutes or until a toothpick inserted in the center comes out clean.
  5. Once baked, allow the cake to cool in the pan for 5 minutes, then transfer it to a wire rack to cool completely.
  6. Once completely cooled, cut the cake into rectangular shapes, about the size of sushi rolls.
Assembly
  1. Lay down a rectangular piece of cake, then spread a layer of whipped cream, followed by a line of sliced strawberries. Ensure there’s a small edge at the ends for easier rolling.
  2. Carefully roll the cake, starting from one end, and gently press until a tight roll forms.
  3. Place seam-side down and slice into bite-sized pieces.
  4. Optionally, dust with powdered sugar before serving.

Notes

Store in the refrigerator for up to 2 days. For best texture, eat it fresh. Variations include using different fruits like bananas or peaches and gluten-free options.
