Ingredients
  

For the Apple Filling
  • 4 medium-sized sweet apples (like Honeycrisp or Fuji), peeled and cored Choose fresh, high-quality apples for best flavor.
  • 1/4 cup brown sugar Can substitute with coconut sugar or maple syrup.
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 tablespoon lemon juice
For the Topping
  • 1 cup shredded coconut (sweetened or unsweetened based on preference)
  • 1/2 cup granola (your favorite kind) Use gluten-free granola for a gluten-free version.
  • 1/2 cup caramel sauce (store-bought or homemade) Replace with dairy-free version for a lighter treat.
  • a pinch sea salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the peeled and cored apples with brown sugar, cinnamon, nutmeg, and lemon juice. Gently toss until the apples are well coated.
  3. Using a spoon, fill each apple with the sweet mixture, packing it lightly to ensure they are filled but not overflowing.
Topping
  1. In a separate bowl, mix the shredded coconut and granola. Sprinkle this mixture generously over the filled apples, pressing it down slightly to adhere.
  2. Drizzle caramel sauce over the top of each apple, allowing it to seep into the filling for added sweetness and flavor.
Baking
  1. Place the apples in a baking dish and cover loosely with aluminum foil. Bake for about 25 minutes.
  2. After 25 minutes, remove the foil and bake for an additional 10-15 minutes, or until the apples are fork-tender and the topping is golden brown.
  3. Remove the baked apples from the oven and allow them to cool slightly before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven for best texture. You can prepare the apples and filling a few hours in advance and keep covered in the fridge until ready to bake.
