Preparation
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the peeled and cored apples with brown sugar, cinnamon, nutmeg, and lemon juice. Gently toss until the apples are well coated.
- Using a spoon, fill each apple with the sweet mixture, packing it lightly to ensure they are filled but not overflowing.
Topping
- In a separate bowl, mix the shredded coconut and granola. Sprinkle this mixture generously over the filled apples, pressing it down slightly to adhere.
- Drizzle caramel sauce over the top of each apple, allowing it to seep into the filling for added sweetness and flavor.
Baking
- Place the apples in a baking dish and cover loosely with aluminum foil. Bake for about 25 minutes.
- After 25 minutes, remove the foil and bake for an additional 10-15 minutes, or until the apples are fork-tender and the topping is golden brown.
- Remove the baked apples from the oven and allow them to cool slightly before serving.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven for best texture. You can prepare the apples and filling a few hours in advance and keep covered in the fridge until ready to bake.
