Preparation
- Preheat your oven to 425°F (220°C). Greasing your baking dish beforehand helps in easy release.
- In a large skillet over medium heat, cook the breakfast sausage, breaking it apart until browned and cooked through (about 5-7 minutes). Drain any excess fat.
- In a mixing bowl, whisk together the eggs, milk, garlic powder, salt, and pepper until well combined.
- In a greased 9x13-inch baking dish, layer half of the tater tots evenly across the bottom.
- Sprinkle the cooked sausage over the tater tots, followed by half of the shredded cheddar cheese.
- Pour the egg mixture evenly over the layered ingredients, ensuring everything is covered.
- Top with the remaining tater tots and the rest of the cheese.
Baking
- Bake in the preheated oven for about 30-35 minutes, or until the casserole is set and the cheese is bubbly and golden. The tater tots should be crispy!
- Once baked, allow to cool for a few minutes before serving. Top with chopped green onions and serve with dollops of sour cream, if desired.
Notes
Customize Your Casserole: Add diced bell peppers, mushrooms, or spinach for added nutrition. Make It Vegetarian: Swap the breakfast sausage for your favorite plant-based sausage or sautéed vegetables. Storage: If you have leftovers, store them in an airtight container in the refrigerator for up to three days. You can also freeze portions for a quick reheat later! Reheating: To rewarm, cover with foil and bake at 350°F (175°C) for 15-20 minutes or microwave individual portions until heated through.
