Preparation
  1. Preheat your oven to 425°F (220°C). Greasing your baking dish beforehand helps in easy release.
  2. In a large skillet over medium heat, cook the breakfast sausage, breaking it apart until browned and cooked through (about 5-7 minutes). Drain any excess fat.
  3. In a mixing bowl, whisk together the eggs, milk, garlic powder, salt, and pepper until well combined.
  4. In a greased 9x13-inch baking dish, layer half of the tater tots evenly across the bottom.
  5. Sprinkle the cooked sausage over the tater tots, followed by half of the shredded cheddar cheese.
  6. Pour the egg mixture evenly over the layered ingredients, ensuring everything is covered.
  7. Top with the remaining tater tots and the rest of the cheese.
Baking
  1. Bake in the preheated oven for about 30-35 minutes, or until the casserole is set and the cheese is bubbly and golden. The tater tots should be crispy!
  2. Once baked, allow to cool for a few minutes before serving. Top with chopped green onions and serve with dollops of sour cream, if desired.
