Ingredients
  

For the Turkey Mixture
  • 1 pound ground turkey Use lean turkey for a healthier option
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon fresh sage, chopped Or 1 teaspoon dried sage
  • 1 teaspoon salt
  • ½ teaspoon black pepper
For the Pumpkin Mixture
  • 1 cup canned pumpkin puree Not pumpkin pie filling
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • 1 tablespoon maple syrup Substitute with honey if desired
For the Topping
  • 1 cup breadcrumbs Use gluten-free if necessary
  • ¼ cup grated Parmesan cheese Optional
  • 2 tablespoons olive oil
  • Fresh parsley, chopped For garnish

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and grease a medium baking dish.
  2. In a large skillet over medium heat, sauté the diced onion until soft and translucent, about 5 minutes. Add in the minced garlic and sauté for another minute until fragrant.
  3. Add in the ground turkey, sage, salt, and pepper. Cook, breaking up the turkey with a wooden spoon, until it’s browned and fully cooked, about 7-10 minutes.
  4. In a mixing bowl, combine the pumpkin puree, cinnamon, nutmeg, and maple syrup until smooth. Set aside.
  5. Spread the turkey mixture evenly in the bottom of the greased baking dish. Pour the pumpkin mixture over the turkey, gently spreading it to cover.
  6. In a separate bowl, mix breadcrumbs, Parmesan cheese, and olive oil. Sprinkle this topping evenly over the pumpkin layer.
  7. Bake in the preheated oven for 25-30 minutes, until the topping is golden brown and crisp.
  8. Remove from the oven and let it cool slightly before garnishing with fresh parsley and serving.

Notes

Use fresh ingredients for the best flavor. Adjust seasonings to your taste. This dish can be made vegetarian by substituting ground turkey with lentils or chickpeas.
