Preparation
- Preheat your oven to 375°F (190°C) and grease a medium baking dish.
- In a large skillet over medium heat, sauté the diced onion until soft and translucent, about 5 minutes. Add in the minced garlic and sauté for another minute until fragrant.
- Add in the ground turkey, sage, salt, and pepper. Cook, breaking up the turkey with a wooden spoon, until it’s browned and fully cooked, about 7-10 minutes.
- In a mixing bowl, combine the pumpkin puree, cinnamon, nutmeg, and maple syrup until smooth. Set aside.
- Spread the turkey mixture evenly in the bottom of the greased baking dish. Pour the pumpkin mixture over the turkey, gently spreading it to cover.
- In a separate bowl, mix breadcrumbs, Parmesan cheese, and olive oil. Sprinkle this topping evenly over the pumpkin layer.
- Bake in the preheated oven for 25-30 minutes, until the topping is golden brown and crisp.
- Remove from the oven and let it cool slightly before garnishing with fresh parsley and serving.
Notes
