Preparation
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and spices (cinnamon, ginger, nutmeg). Set aside.
- In a large mixing bowl, blend the sugar and vegetable oil until well combined. Add the applesauce and eggs, mixing thoroughly until smooth. Stir in the vanilla extract.
- Gradually add the flour mixture to the wet ingredients, mixing gently to avoid over-mixing. A few lumps are okay.
- Evenly divide the batter between the prepared cake pans and smooth the tops.
Baking
- Place the pans in the oven and bake for 30-35 minutes, or until a toothpick came out clean.
- Remove the pans from the oven and let them cool in the pans for 10-15 minutes before transferring to wire racks to cool completely.
Notes
For the best flavor, use fresh spices. Pair with cream cheese frosting or powdered sugar. Store leftovers in an airtight container.
