For the Baked Pears
  • 4 pieces ripe pears, halved and cored Select ripe but firm pears like Anjou or Bosc.
  • 2 tablespoons unsalted butter
  • 2 tablespoons brown sugar Or use maple syrup for a healthier option.
  • 1 teaspoon vanilla extract
  • 1 pinch cinnamon
For the Topping
  • 1 cup mixed berries Can use blueberries, raspberries, or strawberries.
  • 1/2 cup walnuts, chopped
  • 1/2 cup blue cheese, crumbled Substitute with goat cheese or feta if preferred.
  • to taste fresh mint leaves For garnish.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a baking dish, arrange the halved pears with the cut side facing up.
  3. In a small bowl, melt the butter, then mix in the brown sugar (or maple syrup), vanilla extract, and a pinch of cinnamon. Drizzle this mixture over the pears.
Baking
  1. Place the baking dish in the preheated oven and bake for about 25-30 minutes, or until the pears are tender and golden brown.
  2. Once roasted, remove the pears from the oven and sprinkle the mixed berries, chopped walnuts, and crumbled blue cheese over the top.
  3. Return to the oven for another 5-7 minutes to warm the toppings through.
Serving
  1. Garnish with fresh mint leaves and serve warm.

Notes

Leftovers can be kept in an airtight container for up to three days; reheat gently in the oven. For variations, try using goat cheese instead of blue cheese or make it gluten-free with oats.
