Preparation
- Preheat your oven to 375°F (190°C).
- In a baking dish, arrange the halved pears with the cut side facing up.
- In a small bowl, melt the butter, then mix in the brown sugar (or maple syrup), vanilla extract, and a pinch of cinnamon. Drizzle this mixture over the pears.
Baking
- Place the baking dish in the preheated oven and bake for about 25-30 minutes, or until the pears are tender and golden brown.
- Once roasted, remove the pears from the oven and sprinkle the mixed berries, chopped walnuts, and crumbled blue cheese over the top.
- Return to the oven for another 5-7 minutes to warm the toppings through.
Serving
- Garnish with fresh mint leaves and serve warm.
Notes
Leftovers can be kept in an airtight container for up to three days; reheat gently in the oven. For variations, try using goat cheese instead of blue cheese or make it gluten-free with oats.
