Preparation
- In a medium bowl, combine the soy sauce, sesame oil, honey, and cornstarch mixture. This will be your sauce. Set it aside.
- Heat a large skillet or wok over medium-high heat. Add a splash of oil to the pan and let it get hot until shimmering.
Cooking
- Once the pan is hot, add the sliced beef in a single layer. Allow it to sear for about 2-3 minutes without stirring until lightly browned.
- Stir and cook the beef for an additional 2-3 minutes, making sure it’s cooked through. Remove the beef from the pan and set it aside.
- In the same pan, add a bit more oil if necessary, and toss in the onion and bell pepper. Sauté for about 2 minutes until they start to soften.
- Add the zucchini, garlic, and ginger to the pan, stirring frequently. Cook for another 3-4 minutes or until the zucchini is tender but still crisp.
- Return the cooked beef to the skillet and pour the sauce over everything. Stir well to combine, cooking for another 1-2 minutes until the sauce thickens and coats the ingredients evenly.
- Remove from heat and serve hot, garnished with sesame seeds or green onions if desired.
Notes
