Ingredients
  

For the Stir-Fry
  • 1 lb lean beef (such as sirloin or flank steak), thinly sliced
  • 2 medium zucchinis, cut into half-moons
  • 1 medium red bell pepper, sliced
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
For the Sauce
  • 1/4 cup soy sauce (or tamari for gluten-free)
  • 2 tablespoons sesame oil
  • 1 tablespoon honey (or maple syrup for a vegan option)
  • 1 teaspoon cornstarch mixed with 2 tablespoons water (for thickening)

Method
 

Preparation
  1. In a medium bowl, combine the soy sauce, sesame oil, honey, and cornstarch mixture. This will be your sauce. Set it aside.
  2. Heat a large skillet or wok over medium-high heat. Add a splash of oil to the pan and let it get hot until shimmering.
Cooking
  1. Once the pan is hot, add the sliced beef in a single layer. Allow it to sear for about 2-3 minutes without stirring until lightly browned.
  2. Stir and cook the beef for an additional 2-3 minutes, making sure it’s cooked through. Remove the beef from the pan and set it aside.
  3. In the same pan, add a bit more oil if necessary, and toss in the onion and bell pepper. Sauté for about 2 minutes until they start to soften.
  4. Add the zucchini, garlic, and ginger to the pan, stirring frequently. Cook for another 3-4 minutes or until the zucchini is tender but still crisp.
  5. Return the cooked beef to the skillet and pour the sauce over everything. Stir well to combine, cooking for another 1-2 minutes until the sauce thickens and coats the ingredients evenly.
  6. Remove from heat and serve hot, garnished with sesame seeds or green onions if desired.

Notes

Fresh, high-quality ingredients lead to the best flavor. Feel free to switch beef for chicken or tofu for a vegetarian version. Store leftovers in an airtight container in the fridge for up to 3 days.
